Keep increasing it until the wheel starts oscillating on the straights, then decrease it slightly. That will get rid of the dead zone. There are couple little tricks regarding FFB deadzone for g25/27/29. In logitech profiler set overall effects strenght a bit over 100%. 102-105% usually helps.

The Assetto Corsa series supports using a LUT to calibrate your wheel's force feedback response. When you are playing on a lower-end wheel like the Logitech G29 or G920, this quite drastically improves the force feedback.
